Kanomchan baitoie

  • Sweet layer cake batter mix 500 g
  • Thin coconut 1000 g
  • Coconut cream 500 g
  • Sugar 500 g
  • Pandan juice /color for food grade

Instructions

Step 1:
Preheat the pan over low heat add coconut cream and thin coconut stir until the sugar is fully dissolved and well combined.
Step 2:
Then, gradually add Amarinthip brand khanom chan flour to the dissolved coconut milk, a little at a time. Mix until smooth and well combined, then strain through a cheesecloth for a smooth texture
Step 3:
Divide the mixture into two portions.
First portion, add food coloring of your choice or pandan juice.
Second portion plain without any added color.
Step 4:
Heat the steamer until hot. Lightly grease the tray with oil, place it inside the steamer, and steam for about 5–10 minutes.
Then, pour a thin layer (about 1 mm thick) of the colored mixture into the tray. Cover the steamer and steam for another 3–5 minutes
Step 5:
Open the steamer lid and pour a thin layer (about 1 millimeter) of the uncolored batter into the tray. Cover and steam for another 3–5 minutes.
Repeat this process, alternating between the colored and uncolored batter, layer by layer.
Once done, you’ll have beautifully layered khanom chan that is fragrant, colorful, soft, and chewy—ready to enjoy.
